MAUMM was opened in early 2018 by a father and son duo. The concept was simple: put the 30 years of experience of the chef and father, Stephane Bruylant, to good use and make our guests feel at home. With the son Christopher in charge of everything service, together they aim to make your visit the best it could be, with fantastic food, friendly service, and a beautiful rustic Andalusian house renovated to a beautiful contemporary dining area and patio.
A BELGIAN TOUCH
MAUMM prides itself in the quality of everything we serve. We serve only the best ingredients, everything is homemade, and everything is made with that familiar “Belgian touch” to make every dish the best it could be. This is our chefs more than 30 years of experience in Belgian-french cuisine in motion, having worked in restaurants ranging from the si-versailles in Belgium, executive chef in Ocean Club Marbella, Alain Ducasse in Paris, and Aleksandrovski Grand Hotel in Vladikavkaz.
Finding the right ingredients for every dish is a challenge. In the Spanish market, it is at times impossible to find what we need to make that new dish the best it could be, or even make it at all.
Which why we import what we cant find. Whether this be the grey shrimps or Dover soles from Belgium, the French Fine de claire oysters, or the Black Angus meat from Ireland.
THE OLD FASHIONED WAY
Everything that comes out of our kitchen is made the old fashioned way. With over 30 years of experience in the kitchen, our chef has stuck with his ways in making, whipping, mixing, cutting, and preparing everything by hand using traditional methods.
It is this that gives every dish we serve that special touch you will not find anywhere else in Marbella.
